Southwestern Chicken Wrap

Today I want to share something easy and delicious. These Southwestern Chicken Wraps were created by my dear friend Diana. She is always coming up with some good stuff. It doesn't take much time to prepare these wraps and you could add whatever you like to them. I just like the flavors that Diana put together and that's what I stick with.



 Besides one or two ingredients you might already have some of these ingredients
 in your pantry or fridge.




About 1lb thinly sliced chicken breast
1 pkg. Wraps (I chose the Jalapeño flavor)
Chipotle Mayo
1 Can Black Beans
1 Can Corn
About 1 cup Mozzarella Cheese
About 1 cup chopped Tomatoe
About 1 cup Chopped Lettuce





Generously add some zest to your chicken with your season of choice.
I used some season all because that's what I had.  





Add some oil to a pan over medium heat and add your chicken.





Cook chicken on each side for about 3 minutes and until it's brown and crispy.





Once your chicken is all cooked let it sit and rest for a few minutes.



Next, cut your chicken into long slices.
 Then, put it in a pretty little pile, take a break and nibble on a few slices because you've done the hardest part and because you deserve it! :)




Now, stack the tortillas on a dish towel.

Wrap them up, nice and snug without folding the tortillas and warm in the microwave for 2 minutes.
Could be a little more or less time depending on your microwave.
So just keep an eye on them.
You just want them warm so that they are  easy to handle.
Lay out your tortillas and set up a little assembly line.
 
 Squeeze some of that spicy chipotle mayo in the center.


 And spread it out.


Add some chicken.




Add some black beans.

Then some corn.

Some tomato.



Some lettuce.




And last but certainly not least some Mozzarella cheese.





Now to roll your wrap, gently fold in the two shorter ends.



 Then fold over one of the longer edges.




And then tuck in the end.
so, basically you would fold and tuck.




Then Roll.
So....fold, tuck and roll!
Easy right?




This baby is ready to be eaten as is, but I like to give it a little slanted slice for convenience and presentation purposes.






and Viola!




I love bringing a smile to this guys face and these yummy wraps always do the trick.
